Of all the recipes you will see here, this one is Captain Dan’s absolute favorite. Born in southern California he had never been exposed to Brunswick Stew until he came to Florida to visit a few years ago. This meaty stew is a smoky, barbeque creation that is absolutely full of flavor. Made with beef, chicken and pork it will satisfy the most ardent carnivore. If you love BBQ, you will no doubt love this!
Note: This is a “boat” recipe that uses “easy to access foods”. Whenever possible I substitute fresh vegetables and chicken. As for the beef and pork I’ve found that the prepackaged shredded stuff is perfect.
**This Carne de Cerdo to the left can be found at Costco and is AMAZING! Lots of smoky flavor that also makes great BBQ sandwiches.
Ingredients:
- 1/2 Large Onion Diced
- 3 Cloves Garlic, Minced
- 2 Tablespoons Olive Oil
- 1 Small Can Tomato Paste
- 6 Cups Water
- 2 Tablespoons Chicken Bouillon Paste or 4 Cubes Chicken Bouillon, Crushed
- 1 Can Shredded Chicken
- 8-10 Ounces Shredded Beef
- 8-10 Ounces Shredded Pork
- 1/4 Teaspoon Liquid Smoke
- 1/2 Bottle of your favorite BBQ Sauce (We Like Stubbs Spicy)
- 1 Can Diced Tomatoes
- 1 Small Can Mushrooms
- 1 Bag Frozen Peas, Carrots, Green Beans & Corn Mix
- 6 Small Roasting Potatoes Cut Into Bite Sized Cubes
- 2 Tablespoons Butter
In large, stew pot, sauté onions in olive oil until soft but not yet clear. Add minced garlic and continue to cook until onions are clear. Add water, tomato paste and chicken bouillon paste. Stir until thoroughly mixed. Add remaining ingredients. Cook over medium heat until potatoes are soft but firm. Serve up and enjoy!
Note: Sometimes I combine two different types of BBQ sauce using a little spicy and a little sweet. Don’t worry if you don’t have every single ingredient here. I’ve made this with just beef and chicken or pork. The point of this is to get the smoky, BBQ flavor. As long as you have that you can put whatever vegetables or meats you like in it
