Cooking aboard the boat can be a challenge at times. You know, small galley, small oven, small refrigerator and not enough of the modern convenience tools. But, we both love cooking and so we’ve made it our mission to make certain we have great meals at all times.
In my article, Provisioning Tips From Dazzler’s Galley I discussed the art of provisioning for long voyages. While that article was focused on long passages, I use many of those tips and tools even when in the marina or anchorages close to town.
One thing I will say about eating around the world is you have to be flexible! Here in Mexico, for example, I can’t get my favorite Jimmy Dean Sausage that I use for biscuits and gravy. Yep, that’s a real bummer but I can find hamburger and spice it up. It may not taste exactly the same but it’s still really good. I guess what I’m trying to say is, don’t limit yourself to foods you are used to eating. Try all types of local foods. Get out of the rut and you may just find that you love things you never dreamed of eating. I regularly substitute Mexican foods for ingredients in my typical southern recipes. By doing so I’ve come up with some great “new” recipes that we both really love to eat.
On this page we will provide links to recipes for the things we cook a lot. Hopefully you will love them as much as we do. And like I said, don’t be afraid to substitute local foods or spices for what I’ve got listed. You might just find a new combination that truly tickles your tastebuds.
One word about our recipes. We are not the type of cooks who measure things out. We cook by feel and taste. You know, a pinch of this, dash of that, handful of this, season to taste sort of thing. That said, for these recipes we’ve tried to give you an approximate measurement of what we use. If something needs to be exact we will tell you.
Check back from time to time as we will add more recipes along the way. After all, there’s a great big world out there with lots of yummy ingredients to combine for a fabulous meal! (Note: We are working on getting all of these recipes up by the end of day, March 5th. If the one you want isn’t underlined yet, we are still putting it together so check back in a day or two. Thanks for your patience!)
And remember, in the immortal words of Julia Childs, “The only real stumbling block is fear of failure. In cooking you’ve got to have a what-the-hell attitude.”
